The Go-To with Gaston: Posana, Asheville
It’s time for another edition of The Go-To with Gaston and James Beard-nominated chef, John Malik. Jamarcus and John head up to Asheville, NC to feature a feature of the Western, NC foodie spots that were impacted by Hurricane Helene. Asheville is open for business and many business owners are hoping to encourage tourists to support their favorite spots or take a trip to find some new ones. Today we head over to Posana Asheville located at 1 Biltmore Avenue in downtown. Jamarcus and John chat with Martha and Peter Pollay. Here is how they describe the cuisine at Posana:
“Posana’s seasonal menus feature premium, unprocessed ingredients from more than 65 local farmers and purveyors. The restaurant’s casually refined dishes are known to change frequently, reflecting each week’s harvest and accommodating a variety of diners’ needs. Posana was Asheville’s first dedicated gluten-free kitchen, and proudly upholds its promise of an entirely gluten-free menu.”

Posana’s award-winning wine selection holds distinguished awards from Wine Spectator. In 2014, Posana was Asheville’s only independent restaurant awarded Wine Spectator’s Award of Excellence. In 2018, Posana earned Wine Spectator’s Best of Award of Excellence, once again being the only independent Asheville restaurant to achieve this level of recognition.
Posana’s wine cellar focuses on sourcing wine from small production vineyards focusing on organic, sustainable, or biodynamic growing and production principles. Posana has maintained Wine Spectator’s Best of Award of Excellence consistently since 2018. Recipients of Wine Spectator’s Best of Award of Excellence offer a wine list displaying “an excellent breadth across multiple winegrowing regions and/or significant vertical depth of top producers, along with superior presentation. Typically offering 350 or more selections shows a deep commitment to wine, both in the cellar and through their service team.”
