New Spanish-inspired Paloma menu celebrates food and family
GREENVILLE, S.C. — Executive Chef Fernando Coppola brings together Spanish cuisine and culture in his newly-launched menu at Paloma, a popular Spanish tapas restaurant in downtown Greenville.
Known for creating authentic international cuisine, Chef Coppola recently returned from a trip overseas that inspired him to create a menu shaped by his upbringing in Spain and Argentina. “Family recipes are the heart and soul of this menu,” says Chef Coppola, as he reminisces about spending all day in the kitchen with his grandmother as they cooked for the entire family on weekends.

Fernado’s grandparents grew up in Spain before settling down in Buenos Aires, Argentina. He has some fond memories of his time preparing and eating authentic Spanish cuisine. Paloma patrons are now treated to some of his family recipes on the menu such as Gambas Al Ajillo, a popular Spanish dish of sauteed garlic shrimp with paprika and cayenne; Pintxos de Pollo, a marinated chicken breast skewer with chorizo; and Paella for Two filled with shrimp, squid, mussels, clams, chicken, saffron broth, and piquillo peppers. Paella is a signature Spanish rice dish known for its rich flavors, cooked in a wide, shallow, round pan called a paellera. It originated from the Valencia region of Spain and is one of the country’s most iconic and loved dishes, popular for bringing families together. Chef Coppola uses traditional Bomba rice in this dish, just like his grandmother did. It has a starchy center that absorbs three times its volume in broth yet doesn’t break down easily or become sticky and mushy. Chef finds great satisfaction in presenting menu items and ingredients that not only honor his heritage, but also encourage the joy of sharing meals with loved ones.
Chef Coppola’s recent trip to Spain provided further inspiration, leading him to incorporate treasured discoveries from his journey into the Paloma menu. His holiday abroad reignited his enthusiasm for Spanish cuisine with certain dishes leaving such an indelible impression he couldn’t resist bringing them back to Greenville. One notable example is the Jamόn Serrano sandwich, a Spanish ham sandwich served on a baguette featuring Jamόn Serrano, Manchego, Sliced Tomato, and EVOO, which he loved so much that he ate it every day for lunch while in Spain. Upon his return, he immediately took to creating his own version for the new menu.
