Join the cauliflower craze with a twist on a summer picnic favorite

If you’ve been on a low-carb diet lately, chances are you’ve traded mashed potatoes for mashed cauliflower or tried a pizza with cauliflower crust. The cauliflower craze is still in full bloom as cooking with cauliflower has become popular with everyone from in-home cooks to celebrity chefs.

This low-carb alternative to grains contains a number of nutrients, is high in fiber and is a good source of antioxidants which help protect your cells from inflammation.

Cauliflower is low in calories and high in vitamins, and is easy to add to your diet. You can steam it, roast it or sauté it. It has a distinct taste, but it seems to effectively assume the taste of whatever you’re looking for – mashed potatoes, rice, pizza crust or pancakes.

As plans for summer picnics and the Fourth of July take shape, you might consider cauliflower potato salad as a healthy alternative to traditional potato salad, substituting cauliflower for potatoes.

Ingredients:
One head of cauliflower
½ cup light mayonnaise
Olive oil
Celery salt
Minced garlic
Black pepper
Red wine vinegar
Paprika
Dijon mustard
Chopped red onion
Chopped celery
2 boiled eggs

Directions:
Chop cauliflower and lightly steam for 3 – 5 minutes.

Whisk together light mayonnaise, olive oil, celery salt, minced garlic, black pepper, red wine vinegar, paprika and Dijon mustard to make dressing.

Add cauliflower to dressing and mix.

Mix in celery, red onion and eggs, making sure everything is coated.

Refrigerate before serving.
