Exploring the Fungal Frontier: Greg Carter Leads the Way at Deep Woods Mushrooms

MILLS RIVER, N.C. — Embark on an adventure into the fungal kingdom with Deep Woods Mushrooms, where Greg Carter, aka “The FunGuy,” is your guide to all things fungi!

For the past two decades, Greg has been dedicated to learning all about fungal world. From foraging wild treasures to growing up to 100 pounds of mushrooms a week for local restaurants, he’s done it all. And now, he’s sharing his wealth of knowledge with anyone who is interested in learning.

“Everyone knows about mushrooms, but very few people know a lot about mushrooms. And I personally don’t know a lot. But being a commercial grower and forager for as long as I have and because my passion is in mushrooms, I’m able to explain it and bring it down to layman’s level,” Greg explained. “I’m not a mycologist, although I do have a PhD. It hangs in my shed. But I’m mainly self-taught with the help of the Asheville Mushroom Club, Alan Muskat was my guru. He is the mushroom guru of Asheville. Mushrooming is a lifelong endeavor. And so I keep it very basic to get people started on their fungal journey.”

Our Living Upstate SC Host, Jamarcus Gaston, first met Greg a couple years ago while taking a course at Deep Woods Mushrooms, and he has been foraging ever since!

“Everyone had a COVID hobby where you want to learn something new or try something new, and that’s when my interest in mushroom and foraging kind of came about,” Jamarcus explained. “Now I’m always texting and emailing Greg, being like, ‘What is this? Or is this what I’m thinking it is?'”

Jamarcus has gone from mushroom newbie to seasoned forager, all thanks to Greg’s expert guidance.

“I never thought I would get so excited about finding my first hen of the woods. I was smiling ear to ear, and holding that thing was probably equivalent to holding your first newborn,” Jamarcus said with a laugh.

“It’s like Easter egg hunting for adults,” Greg added. “It’s a culinary treat. A lot of these mushrooms, you’re not going to get in a grocery store. You’ll only get in a restaurant unless you’re paying an exorbitant amount of money.”

With his laid-back style and contagious enthusiasm, Greg makes learning feel like an adventure. So, whether you’re a curious beginner or a seasoned mushroom aficionado, Deep Woods Mushrooms has something for everyone. And with classes that feel more like a day out with friends than a stuffy lecture, you’ll be hooked from the get-go! .
