Easiest Best Homemade Salsa

Ingredients

2 large, firm tomatoes
1 medium red, green & yellow bell peppers
1 medium jalapeño pepper
1 medium purple onion
1/2 bunch fresh cilantro

Instructions

  • In large bowl add the following: Tomatoes – diced small, keeping juice; Bell peppers – remove ribs, seeds & dice small; Purple onion – diced small; Jalapeño – slice in half. Remove ribs, seeds & dice small. If you like hot salsa, leave seeds in; Cilantro – with kitchen shears, snip 1/2 of a fresh bunch into the salsa; 1/2 teaspoon Kosher salt; 1/4 cup fresh lime juice
  • Mix all ingredients well
  • Cover bowl with plastic & place in refrigerator over night in order for the ingredients to blend together.
  • Enjoy with corn chips. Excellent on hot dogs or hamburgers.

Pack in glass jars with tight seals and this salsa will keeps well in the refrigerator for approximately 30 days. Amounts of ingredients can be adjusted to your preference. If you like your salsa with more liquid, take 1 med/large tomato and purée it in a blender… add to ingredients. Mix well.
