Carolina Eats -The Best Strawberry Shortcake Ever

Looking for a sweet, refreshing dessert that’s as easy as it is delicious? Debbie Elmore has you covered with her take on a Southern favorite: The Best Strawberry Shortcake Ever by Debbie Elmore. This cool, creamy dessert layers soft cake, juicy strawberries, and a fluffy pudding mix that’s sure to become your go-to for summer gatherings and Sunday suppers alike.

Ingredients:

  • 1 box Laura Lynn Yellow or White Cake Mix

  • 1 (5.1 oz) pack Instant Vanilla Pudding

  • 1½ cups milk

  • 1 (8 oz) container Cool Whip

  • 4 cups sliced strawberries in juice

Directions:

Bake the cake according to the package directions using two round pans. Once baked, allow the cakes to cool completely.

In a mixing bowl, combine the pudding mix with the milk and stir until well blended. Chill in the fridge until the mixture is set, then fold in the Cool Whip until smooth and creamy.

In a large bowl or trifle dish, layer one of the cake rounds, then half of the strawberries, followed by half of the pudding mixture. Repeat with the remaining cake, strawberries, and pudding mixture.

Cover and refrigerate until ready to serve. Pro tip from Debbie: The longer it sits, the better it gets!
